This Malagousia is treated a little differently; spontaneous fermentation from naturally occurring yeasts is still the norm, however this fermentation occurs with the juice left on the skins for around 48 hours. The process extracts some colour and tannin before the fermenting juice is drained off and completed as a ‘normal’ white wine. It retains the natural, floral and aromatic qualities typical of the variety, but this is where the similarities end. After five months maturing on its fine lees in clay amphorae, the resulting wine has notes of tangerine, apricot and red apple skin, along with a hint of straw, cinnamon and young woody herbs – rosemary and thyme in particular lift the soft skinned fruit flavours.
