A serious, savoury rosé with a succulent tannic grip, built for food. This blend is roughly 70% Xinomavro and 30% Syrah, spending eight months post fermentation in second-fill oak on its fine lees, which adds structure and a touch of caramel and vanilla spice. The nose is fine, floral and pretty, almost deceptive, as the palate explodes with macerated strawberry and pomegranate, basil and mint, and a peppery spice to finish. This would be a delight alongside grilled chicken thighs with Béarnaise sauce, or a prawn arrabbiata with linguine or caponata.
