A well-conceived blend showing lemon, lime and pineapple freshness with a little texture on the palate.
Xynisteri is naturally lower in acidity, which is why this blend with 25% Sauvignon Blanc is such a success. The Sauvignon grapes are picked earlier (late August) than the Xynisteri, which is harvested around the middle of September. Once fermented and blended, the wine spends three months on its lees. It is bright and gorgeously aromatic with flavours of lime, kiwi and pineapple, and the palate is defined by a crisp, refreshing acidity. Time in-bottle has seen the wine take on a little weight and texture to compliment the bright citrus character.
