This vibrant ‘Méthode Ancestrale’ pushes the style and expectations of Austrian wine as we know it. The wine was bottled before primary fermentation was complete, as is the style, and so, the excess CO2 was retained and dissolved into the wine giving a softly sparkling, creamy white. It then spends a period of maturation Sur Latte – adding gorgeous texture and mouthfeel – before each bottle is carefully hand-disgorged. It beautifully captures the tension and aromatics of Riesling, together with the texture unique of Roter Veltliner. The juicy, delicious palate and soft, lively bubbles result from the skill of both Thomas Mantler and Mags, and the meticulous judgment in relation to sugar and potential carbon dioxide production. Notes of wildflower and herbs on the nose are enhanced by a palate packed with citrus peel, green apples and ripe orchard fruits. The clean and refreshing finish truly encapsulates what the purists love about this style, with a vivid, lasting purity!
