Tavel is typically famed for complex, robust rosé with production methods more akin to the making of a red wine, with long maceration of the red varieties on their skins – in this instance 48 hours. After pressing, fermentation is a long slow process, at cooler temperatures to preserve aromatics and the nose is dominated by the fresh red fruit and the peppery spice of Syrah. It is deep in colour, the palate is full and tense with impressive yet not imposing structure and there are delicious notes of fresh cherry, wild strawberry, watermelon, basil, then more red cherry and, finally, a lick of pepper.
