Even in the wonderfully consistent climate of Lodi, Viognier still presents a challenge in the vineyard. Managing sugar development, retaining acidity, and keeping potentially high alcohol levels in check which come naturally to the variety, are all crucial. The growing season in 2021 allowed for this, with the carefully hand-picked crop brought into the winery in peak condition.

The grapes were gently pressed and the juice allowed to settle in cool, stainless steel tanks, to allow for better integration while still protecting the delicate aromatics. Fermented to near-dryness, the wine was then aged in French and American oak barrels, only 15% of which were new. This process of small barrel ageing allowed the wine to slightly concentrate without adding heavy, toasty notes to mask the freshness of the variety.
