Αlátes – which in Cypriot means wings – is made solely from old vine Xinisteri, the dominant local white grape variety, and which is picked right at the end of September. The grapes are cooled and then pressed, with fermentation and maturation taking place in large-format, untoasted oak producing a rich and fleshy white with a lean, mineral finish.
