Hand harvested Pinot Noir grapes from a single vineyard were picked at the perfect level of phenolic ripeness, giving this wine a strawberry and red cherry core. The texture and mouthfeel are the result of a combination of 100% whole cluster pressing, and 25% malolactic conversion. These notes are perfectly balanced, with crisp and refreshing acidity, while the wild fermentation element adds a slight spice on the finish.
