This remarkable, traditional method sparkling wine is the result of quite a happy accident. Due to a slight snafu when Ntsiki moved her bottling and storage to a new site, there was a problem with some  of the paperwork, meaning this wine could not be released. Time passed and the urgency to solve the problem became less so, until the team at Aslina tasted the wine last year. Such was its perfection and persistence that now was the time to move the wine and herewith the result. 100% Chardonnay from Franshoek, painstakingly hand-picked in February 2016, the wine spent five years in-bottle, on the lees (quite a bit longer than the required [at the time] nine months [it is now 12 from the 2023 vintage]) adding intense savoury complexity to the fresh green apple and lime fruit notes. It is rich on the palate, broad and bright with butterscotch, brioche and almond notes, too.
