A delicious sparkling wine, spending (the now requisite) 12 months on lees, which adds wonderful texture and yeasty, toasty notes to the perfectly ripe green fruit profile. The base wine is made from 70% Chardonnay and 30% Pinot Noir, and the grapes for are all hand-harvested – from a single four hectare plot in McGregor. This is essential as the grape clusters are gently whole-bunch pressed to minimise colour and tannin extraction from the skins of the berries, while the stems allow better drainage for the free-run juice. Secondary fermentation lasts around two months, then the bottles are chilled and racked, before settling in the cellar for the year to allow the yeasty complexity to develop.
