The result of quite a happy accident, this traditional method South African Sparkler is 100% Chardonnay from Franshoek, painstakingly hand-picked in February 2016. The wine spent five years in-bottle, on the lees (quite a bit longer than the required [at the time] nine months [it is now 12 from the 2023 vintage]) adding intense savoury complexity to the fresh green apple and lime fruit notes. It is rich on the palate, broad and bright with butterscotch, brioche and almond notes, too.
