The grapes for this Rosé Pét-Nat come from the same parcel that previously produced the still Rosé. Such was the quality of the fruit, and the success of the Roter × Riesling Pét-Nat, that a portion was instead reserved for this delicate and quietly decadent sparkling Rosé. As with all the ‘MAMA’ wines, minimal intervention is taken seriously here, but never at the expense of balance or varietal typicity: wild fermentation with ambient yeasts, no added sulphur, unfined, unfiltered, and a second fermentation that takes place naturally in bottle. The resulting wine is vibrant and beautifully expressive, with aromas of red cherry, wild strawberry, blossom and dried herbs. The palate is naturally creamy, its finely integrated mousse carrying crunchy red fruits, macerated raspberry and subtle notes of lemon thyme and rosemary. A delicate oxidative nuance lends complexity before a long, dry finish of orange peel, beeswax and a refreshing, gently sour edge.
