This ‘Super-Tuscan’ is made from 100% Cabernet Sauvignon and, to ensure only very best fruit is used, the grapes are first hand-harvested (in mid-October for the 2020), followed by a second selection won the sorting table. The grapes that survive this rigorous inspecting are then passed through a linear de-stemmer and a rolling sorter where damaged are imperfect grapes are further discarded. After alcoholic fermentation, malolactic conversion is allowed to take place, but in a strict temperature controlled environment – in concrete tanks at 20 degrees – to preserve the vibrant acidity and elegant freshness of the high-altitude vineyards. The wine then spends 24 months in a mixture of new and used French Oak barriques, and the resulting wine has a deep colour, but an elegant, complex aroma straight out of the bottle. The nose is deceptively delicate with florals, black fruits and subtle spices, all wrapped in hints of oak and vanilla, while the palate is rich, with mouth-coating tannins, more deep dark fruits – black plum, blackcurrant, blueberry – and a vibrant freshness that forms and frames the wine in the mouth and on the long, lingering finish. As you’d expect, this will age gracefully of the next two decades, but that elegant freshness, and those ripe, fine tannins means it is already approachable now, especially when decanted. Of course, this would be well at home with red meat, game, grilled and roasted meats; but also pecorino cheese, or a vegetarian lasagna with roasted vegetables, or a fried aubergine biriyani.
