Premier Cru Vaillons occupies a favoured south-facing position on Chablis’ left bank, where plentiful sunshine ensures the Chardonnay berries gain optimal ripeness, producing a wine which is a little fuller, with a softer fruit profile than the drier, more austere wines of the north bank. That is not to say it is fat or flabby; fine, incisive acidity keeps the wine poised, drawing it to a long, saline finish that lingers with comfortable elegance.
