This exquisite Tokaji is medium amber in colour, with complex notes of quince, overripe apricots, dried pear, rosehip jam, and a warming paprika spice on the nose. It is a blend of 80% Furmint and 20% Hárslevelű, with the aszu grains soaked in fermenting wine for four days before being pressed with a traditional medium-spindle press. Once fermentation is complete, the wine is racked into old Hungarian Oak where it is left to mature for three years.
On the palate, there is a beautiful harmony of sweetness and acidity, with dried apricots, burnt sugar, stem ginger, crystallised pineapple and marmalade. It is rich and substantial with a long finish, which is vibrant with yellow plum, orange and a lasting freshness. This would make a fine partner to a dense fruit cake, steamed treacle pudding or, equally, creamy blue cheese.
