The Iván Bikavér is a premium, single-vineyard cuvée and the realisation of the goal of Csilla and Csaba Sebestyén; a wine that aptly speaks of its place, the varieties and tradition. The valley is nicknamed ‘the southern cauldron’ and is both South-West and South-East facing, providing excellent ripening conditions for Kékfrankos in particular, which forms the backbone of the blend. The rest is 23% Cabernet Franc, 17% Merlot, 8% Kadarka and 6% Cabernet Sauvignon. The resulting wine, which sees 23 months’ ageing in a mixture of French and Hungarian oak, is concentrated, rich and expansive. There are notes of black plum, blackberry and mulberry fruits, and dark cherry to the fore, alongside an elegant spice complexity and the savoury, pencil lead notes indicative of high quality Cabernet Franc.
