This is a wine as intriguing as it is delicious, and certainly not your average Sauvignon Blanc. Hand-picked, hand-sorted grapes are whole-bunch pressed, naturally fermented and, importantly, the addition of 10% 30-day skin-contact Colombard gives lifted tropical notes and a juicy, succulent palate. The Sauvignon spends four months on the lees before blending and bottling to add weight and texture, and the results are complex and delightful. The typical zesty characters and high acidity of Sauvignon Blanc are complimented with guava, kiwi, peach and apricot, lemongrass and thyme.
