The Zweigelt ‘Carbonique’ marks the final piece of the puzzle for the ‘MAMA’ range. The grapes for this unique take on the classic Austrian variety were hand-harvested from a single vineyard plot, chosen for its specific aromatic profile and freshness. This is a vibrant and lively expression, displaying a typical bouquet of purple flowers and blueberries, with the addition of parma violet and pomegranate, thanks to 12 days’ carbonic maceration on whole clusters of Zweigelt grapes. The wine was gently pressed over several days into old 228 litre barrels, where it was allowed to ferment fully to dryness, and where it spent the following six months. It was then bottled unfined and unfiltered, and the result is a juicy, low-tannin red bursting with sappy acidity, wild red cherry, and damson aromas. This would be excellent with chargrilled vegetables and lightly seasoned duck.
